Zucchini Fritters

These fritters are unbelievably easy to make, low calorie, and the perfect way to sneak in some veggies to any fussy eater.
Ingredients
- 1 large zucchini (400g)
- 2 large carrots (160g)
- 200g sweet potato
- 1 medium onion (85g)
- 2 eggs
- 1/4 cup gluten free flour
- 1 clove garlic – minced
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley and/or oregano, chopped
- 1 tablespoon lemon rind (DON’T FORGET THIS)
- 1/4 teaspoon onion powder
- 1 teaspoon Himalayan rock salt
- 1/4 teaspoon pepper
Instructions
- Grate the zucchini, carrot, sweet potato and onion with the large holed side of the grater.
- Place veges in a colander and squeeze out any moisture. This is important. If you miss this part you will need more flour, or psyllium husk to bind the mixture.
- Place vege in a large bowl and mix in all remaining ingredients.
- Heat 2 tablespoons of olive or coconut oil in a pan (medium/high heat “7”)
- Using hands, mould mixture into patties.
- Place in pan and cook until fritters look golden.
- Turn and repeat on other side.
Notes
- These are fabulous served with poached eggs and ham for breakfast.
- Or even a salad for lunch.
