Lemon Protein Balls

Ingredients
- 1 cup almond meal
- 1/3 cup coconut oil
- 1 cup desiccated coconut, plus extra for rolling
- 1/2 cup vanilla protein powder (I like FitBits Pea Protein)
- 2 tablespoons cashew or almond butter (or peanut butter if desperate)
- 1 lemon – juice & zest
Instructions
- Place all ingredients in a food processor & process until mixture comes together.
- If too wet add more coconut, if too dry ad more cashew butter.
- Shape into balls and roll in extra coconut.
- Place in the fridge for at least 30 minutes before serving.
- Place balls in air tight container and store in fridge for up to 2 weeks. Or months in the freezer.
Notes
- You are looking at roughly 150 calories per ball, so do limit yourself.
