Ginger Lime Chicken Bites
Serves 3
Ingredients
Chicken & Marinate
540g skinless chicken breast
Juice of 1 lime
3 Tbsp. soy sauce
1 Tbsp. olive oil
1 tsp grated ginger
1 clove garlic
2 Tbsp Brown Rice Malt Syrup or Raw Honey
1 small onion chopped really small
Marinate anywhere from 1 hour to overnight. Cook in hot pan until sauce becomes sticky and thicker.
Noodles & Veg
2 Pkts Aldi Vermicelli Rice Noodles
Or 2 Pkts Slim Pasta
Or Zucchini Spaghetti or Fettuccini (Microwave for 1 minute to get a little soft)
2 Carrots cut julienne
1 cucumber cut julienne
150g green beans cut thin
2 – 3 tbsp. chopped Italian parsley
2 tbsp. fresh basil chopped
1 tbsp. fresh mint chopped
2 shallots chopped finely
Optional extras: toasted pepita seeds, almond flakes or roasted sweet potato
After preparing the Noodles/pasta, just toss through all the veges and herbs. Then spoon in all the chicken and juices from cooking pan and toss through.
